Just because a chicken dinner is only 100 calories doesn’t mean it has to be a bland, dry meal. The mixture of white wine and lemon provides a zesty, filling mouthful that promotes a feeling of fullness on warm summer evenings.

Ingredients:

  • 4 boneless skinless chicken breasts
  • ½ cup reduced fat chicken broth
  • ¼ cup white wine
  • 1 medium onion, sliced
  • 3 cloves fresh garlic sliced
  • ½ cup roasted red peppers
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 fresh lemon, cut in pieces, remove seeds

Preparation:

Place chicken in shallow baking dish. Top with all other ingredients and cover dish. Bake at 350 for 45 minutes to 1 hour.

Serving Sizes:

This dish allows for approximately 1/3 chicken breast w/sauce & veggies on top per 100 calorie serving. Check the calories on your ingredients to be accurate on the count.
